Who doesn't love chocolate chip cookies? I know 962 do! So in an attempt to give my family healthy recipes that will taste good and be good for them too, I attempted a new recipe to add to our family's "wheat free" arsenal. I found this recipe on Pinterest from, Bethenny Frankel's website. However I made a few changes for our family. Here is the run down.
First preheat the oven to 350, and line a baking sheet with parchment paper to prevent the cookies from sticking, and making less clean up mess for you in the end. Then, start with mixing together the following ingredients in a large bowl:

- -1/4 cup(s) of butter, softened
- -1 1/2 cup(s) of raw sugar
- -1/3 cup(s) of mashed banana

- -2 tsp. of vanilla extract
- -2 tsp. coconut oil
- -2 tsp. coconut oil

Then mix the the dry ingredients together in a separate bowl.
- -2 cup(s) of oat bran flour
- -1/2 cup(s) rolled oats
- -2/3 cup(s) of cocoa powder
- -3/4 tsp. of baking soda
- -1/4 tsp. of Celtic sea salt
Next mix the dry ingredients into the sugar/butter mixture in small increments. Then add- -1 1/4 cup(s) of semi sweet chocolate chips
Finally, use a medium sized ice cream scoop to drop the dough onto the parchment paper. Bake for 15-20 minutes. Yields about 2 dozen nice sized cookies (My first batch got a little crunchy when they went past the 20 minutes recommended from the original recipe. So if you like them crunchy then let them go till 23ish. I know, so technical! I went back to 15 and I liked the chewiness much better. )Let cool on a cookie rack and ENJOY!!!! As you can see from the photos 962 did. Well 96 did. 2 was down for a nap and will have to wait to enjoy hers. :) 6 was quoted as saying "DELICIOUS!!!" I guess it will be a new favorite in our house and the boys loved being able to eat the dough while I wasn't worried about salmonella poisoning! :)
- Three tips that I found while making this recipe were:
- 1) Keeping a small medication cup on hand
- from dispensing meds for young children is a great way to have them help in the kitchen as it is
- easier for them to pour and see the various lines for correct amounts.
- 2) A great way to have
- mashed banana on hand to add sweetness to other recipes, is to simply store bananas in a freezer bag until ready to use. Putting 1/2 a banana in a small freezer bag would be great for individual uses. Then when you need some mashed banana, just set out on the counter for approximately 20 minutes and then mash it in the bag. This works great, and it is something that 962 can help with to!
- 3) You will want to change the parchment paper out after each batch if you are using one cookie sheet. Or just use two cookie sheets and you will be good.
